Serves 10 people
Ingredients for the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (makes 850ml, to serve 10)

200ml citrus syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Combine all the components inside a saucepan, heat until it reaches a simmer, mixing to dissolve. Then, take off the heat allowing it to cool completely. Decant to a sterilised bottle, seal and refrigerate it in the fridge, it will last for around one month.
To make Batch Mix: Combine the specified spirits and syrup into one big jug, allow it to infuse for an hour, then filter it best through a fine cloth, making it completely strained.
When ready to serve: Add 85ml of your cocktail base into your cocktail shaker packed with ice, and stir lightly for about 60 seconds to cool it down. Strain into a chilled martini glass or similar, decorate with the cranberries and complete it with a brief mist of mandarin oil above the glass.
